It is the month of cold days and easy meals which is why I need this Slow Cooker Easy Beef Stew. Mostly because this mama is stuck inside all day with a toddler who wants to chase dogs and play in the dirt. Which are good boy things to do, I just hate watching his little nose turn red and chase all the snot.

But, this Easy Beef Stew is perfect for a hunting weekend, a busy weekend with teenagers (hello Disciple Now weekend), or just yourself and leftovers all week. I keep the veggies chunky, but you can chop them up even more before you cook everything.

Slow Cooker Easy Beef Stew

This hearty beef stew is perfect for a lazy weekend, cabin or hunting, or just to fill the hungry mouths at your own table. Everything is combined in the slow cooker and sits to work the magic with chunky vegetables and hearty deep flavor.

Ingredients

  • 3 pounds stew meat
  • 1 bag petite carrots
  • 3 red potatoes
  • 1 bag frozen vegetables for stew
  • 1 pouch Beef Stew seasoning pouch
  • 14.5 oz can Italian Style Diced Tomatoes
  • 32 oz beef broth
  • 2 teaspoons steak seasoning
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire if desired

Instructions

  • Place stew meat in the bottom of a slow cooker.
  • Pour bag of carrots and frozen vegetables over meat.
  • Cut red potatoes into chunks and add to vegetables.
  • Add all remaining ingredients.
  • Cook in slow cooker on low for 8-12 hours.

Notes

This is a great recipe to substitude deer meet instead of stew meat. Or you could use a rump roast and shred the meat before you serve it. This is such a hearty warm, feel good dinner.

This recipe is a great one to use with deer meat if you have that in your freezer. Also, you can use a rump roast for the meet. It’s way cheaper than stew meet and you can cut it up in chunks or leave it whole and shred it before you eat it.
