This Slow Cooker Mock Gumbo is our go-to recipe for Fat Tuesday. Just a fun way to celebrate a holiday with fun food and keep things easy in the slow cooker and Weight Watcher friendly.

Celebrating food a holiday was probably the thing I looked forward to most about being a mom. Besides Christmas Morning and Easter Baskets, and maybe a few thoughtful crafts I was most excited about planning special meals for my family, just like my mom did for us. I guess to me it was the fun part of being a mom. And, you know what? My expectations were totally exceeded.

I’ve discovered pretty much my most favorite thing ever is to prepare fun meals for people I love. Whether it’s a special Valentine’s meal, St. Patty’s day green things, our own fancy Christmas dinner or just something simple like homemade pizza on a Friday night, I love meals that are prepared with love and anticipate them from the time I buy all the ingredients.

Those looking for no-carb or keto-friendly meals with lots of flavors will find this a perfect substitute for authentic New Orleans flavors while leaving room on the waistline for a piece of King Cake.

I’ve developed a couple of different recipes for gumbo over the years and would probably disappoint anyone who had an ounce of cajun in their background. But, I’m from Texas so just having something hearty with a little spice is really all I need to check the box. 

This year for our Fat Tuesday meal at home, I decided to try and use up some things in our pantry and freezer as we continue our quest to defrosting and decluttering.

And, in the process, I found a meal that is perfect for our Weight Watcher-friendly menus. While this WW Slow Cooker Mock Gumbo may not be authentic, it does start with the holy trinity and a roux, so I have to get some credit for approaching the game with a sense of authenticity.

WW Slow Cooker Mock Gumbo

This Slow Cooker Gumbo is Zero points and totally weight watcher friendly as well as a nice place to hide a few vegetables for your kids and husband. Those looking for no-carb or keto-friendly meals with lots of flavors will find this a perfect substitute for authentic New Orleans flavors while leaving room on the waistline for a piece of King Cake.

Ingredients

  • 3 chicken breast
  • 1 cup onion chopped
  • 1 cup celery chopped
  • 1 cup carrots chopped – OR – 2 cup matchsticks
  • 1 tablespoon olive oil
  • 1 bag frozen okra
  • 1 medium bell pepper diced
  • 1 can whole kernel corn
  • 2 cans stewed tomatoes
  • 3 cups chicken stock separated
  • 1 pkg white chicken chili seasoning
  • 2 Tablespoons Old Bay seasoning
  • 5 bay leaves
  • 2 teaspoons Italian seasoning – OR – 1 teaspoon oregano and 1 teaspoon thyme
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Smoked turkey sausage
  • 1 cup chopped kale
  • Shrimp or crab meat.

Instructions

  • In a skillet, heat olive oil.
  • Chop onion, celery, and carrots and saute in skillet until edges start to brown.
  • Meanwhile, place chicken in bottom of slow cooker.
  • Add sauted vegetables over chicken, in slow cooker.
  • Next, add okra, bell pepper, stewed tomatoes, corn, 2 cups chicken stock, and seasonings.
  • In a skillet melt two tablespoons butter.
  • Once melted, sprinkle with 2 tablespoons of flour.
  • Stir together with a whisk to make a roux.
  • Once all the flour is absorbed, pour in 1 cup chicken stock and quickly stir together until liquid starts to thicken.
  • Pour into slow cooker and stir together to incorporate.
  • Cook on low for 4 hours.
  • Cut turkey sausage into ½ inch discs and quarter those slices.
  • Add to slow cooker and cook on low 4 more hours.
  • About 20 minutes before serving, add kale and shrimp.
  • Serve over cauliflower rice.

Notes

**Additional options – serve over brown rice or quinoa rice mix, but points are not included. Another option is to serve with lump crab meat instead of shrimp. Just add a spoonful to the top when ready to serve in bowl. Crab meat and rice choice need to be recorded separately for WW points.
