This weight watcher friendly crockpot soup lightens up one of my favorite soup recipes and adds the ease of the slow cooker for the preparation. In my usual style, I took one of my favorite recipes and put my spin on it, threw it in the crockpot, lightened it up to make it weight watcher friendly. It’s something you will eat over and over again to not waste leftovers.
My sister-in-law makes the yummiest Sausage Tortellini Soup. It’s one of the recipes I made sure to include in our family recipe book at Christmas so we would always have it. We love it every time she makes it, plus it’s easy to serve to a group, can be partially made ahead, and thrown together quickly when it’s time to eat.
With the first of January bringing days of below-freezing temperatures, I knew I wanted some soup recipes on our menu last week. But, coming home from the Christmas holiday away with family, I was feeling super lazy. So, I thought I’d take this tried and true recipe and put a spin on it with my new crockpot! Yes, I’m 40 and one of the top presents I wanted this year was a new crockpot.
Weight Watcher Friendly Crockpot Sausage Tortellini Soup
Ingredients
- 1 lb Turkey Italian sausage
- 1 cup chopped frozen onion
- 1 cup chopped frozen bell pepper
- 1 spaghetti sauce packet or 2 T Italian seasoning
- 2 cans diced tomatoes with garlic or Italian Stewed tomatoes
- 1 can Campbell’s condensed French Onion soup
- 32 oz box beef broth
- Salt and pepper to taste
- 1 bag coleslaw blend
- 4 big handfuls chopped spinach/kale salad blend can be all one or the other
- 9 oz. bag frozen cheese tortellini can sub wheat pasta
- 1 cup FF mozzarella
Instructions
- Cook sausage and drain on a paper towel-lined plate.
- In sausage grease, sauté onions and bell pepper.
- (First two steps can be done the night before or immediately before assembling)
- Line crockpot with a liner.
- Place meat, onions, and bell pepper in the bottom of the crockpot.
- Add tomatoes, onion soup, seasoning, and beef broth.
- Salt and pepper to taste.
- Cook on low for 4-6 hours.
- 15 minutes before eating, add coleslaw mix, chopped spinach, tortellini, and cheese.
- Serve with garlic bread or crescent rolls.
Notes
With the new WW plan, we are using whole wheat pasta as a zero-point food, so I would sub out whole wheat rotini or penne for tortellini to save points. But, when you put in the recipe, it comes out to 4 points a bowl or 3 points a bowl with whole wheat pasta.
