Toddler food and diet food seem to be the topic of conversation around our table most days. What new food options could we have to keep protein, fruits, and vegetables at our table as often as possible? Also, I seem to be in kind of a rut when it comes to meal times for Little Man. Breakfast, lunch, and dinner look the same most days.

  • Breakfast – hulk juice (baby green smoothie), Jimmy Dean Egg Frittatas, Banana Pancakes, and fruit – strawberries usually
  • Lunch – lunch meat, peas and carrots, fruit, and then crunchies
  • Dinner – usually the same as lunch or things from what we are having for dinner if he can pick them up with his hands.

I recently shared some Toddler Snack ideas and favorite finds at Trader Joe’s. So, this morning, I thought I’d throw in a recipe for a breakfast staple around here almost every day.

But, you know these could easily be something you could eat if you were on a Weight Watchers or High Protein, Low Sugar diet. The simplicity of what I’m about to share with you will BLOW your mind. Seriously.

Banana Pancakes

These toddlers approved Banana Pancakes just need 2 ingredients and are a healthy option for people on a diet. Stack them up or eat them individually.

Equipment

  • blender
  • skillet
  • spatula

Ingredients

  • 1 banana
  • 2 eggs

Instructions

  • Mix together both ingredients in a blender until completely blended.
  • Heat a skillet on low or next to low setting.
  • Spray skillet with cooking spray.
  • Pour batter into the skillet.
  • Pour out in one spot until the batter makes a 3-4 inch circle.
  • Stop pouring and repeat to fill the skillet.
  • Skillet will probably hold 3 pancakes at one time.
  • Watch batter.
  • When bubbles appear throughout circle and edges start to pull away from skillet, they are ready to flip.
  • Using a spatula or “flipper,” carefully flip each pancake over.
  • Wait just a few minutes and transfer to heat resistant plate.
  • Repeat until all batter is used.

Notes

You can make multiple batches at the same time. We often have bananas turning dark or going bad and that’s when I make up a batch. Bananas get sweeter when they get to that stage. They also sometimes get runnier, so if the batter is not holding up when you pour it in the skillet, add another egg and blend again.

When I was trying to use up baby food we had left, I also found that they made the same pancake. One tub of food and 2 eggs. I would mix tropical flavors together like kale or peaches or pumpkin and a couple of bananas too, with the eggs and those baked up the same. Sometimes I throw a little cinnamon in the top because I know it would taste good, but Little Man doesn’t seem to have a preference any which way.

For grown-ups looking for a treat while still staying on their diet restrictions, these pancakes with a little sugar-free maple syrup and fresh fruit can help you meet a craving without messing up your plans.

The pancakes freeze well. I will usually make a stack of 6-8 pancakes and put them in a snack size square baggie. Since I usually make these in big batches I”m set for a couple weeks at a time.

Little Man usually has some version of a green smoothie and then a Jimmy Dean frittata and or a pancake (or 2!) each morning.
