Banana Pancakes

These toddlers approved Banana Pancakes just need 2 ingredients and are a healthy option for people on a diet. Stack them up or eat them individually.

Equipment

  • blender
  • skillet
  • spatula

Ingredients

  • 1 banana
  • 2 eggs

Instructions

  • Mix together both ingredients in a blender until completely blended.
  • Heat a skillet on low or next to low setting.
  • Spray skillet with cooking spray.
  • Pour batter into the skillet.
  • Pour out in one spot until the batter makes a 3-4 inch circle.
  • Stop pouring and repeat to fill the skillet.
  • Skillet will probably hold 3 pancakes at one time.
  • Watch batter.
  • When bubbles appear throughout circle and edges start to pull away from skillet, they are ready to flip.
  • Using a spatula or "flipper," carefully flip each pancake over.
  • Wait just a few minutes and transfer to heat resistant plate.
  • Repeat until all batter is used.

Notes

You can make multiple batches at the same time. We often have bananas turning dark or going bad and that's when I make up a batch. Bananas get sweeter when they get to that stage. They also sometimes get runnier, so if the batter is not holding up when you pour it in the skillet, add another egg and blend again.
