Cinco de Mayo is kinda like Valentine’s Day, it’s on the calendar every year no matter what else is going on. And, if I like anything, I enjoy celebrating a good food holiday. I’m sad that our community’s Fiesta Fest got pushed back this spring, but that doesn’t mean we won’t be adding a few of our favorite Mexican foods to the menu and possibly this Chile Lime Snack Mix I developed this past fall for our GuacStar party.

If you missed that, let me just break it down like this. Little Man loves Guacamole and he loves salsa and his Halloween costume this past year was an avocado that I added a fun wig to and a cute t-shirt and called him a GuacStar. We used it as an excuse to have some of our favorite people over.

It was just a fun night with an easy excuse to get people together. Weren’t those the days! But, seriously just because you can’t get a big group of people together doesn’t mean you can’t do something special with your family. I mean at my house, the meal plan usually has some sort of Mexican food on it each week! And, celebrating fun food holidays was one of the things I looked forward to most about being a wife and mom.

Don’t let an opportunity to make a fun food memory pass you up this next week.

Add the items for a fun and easy dinner to your grocery list. Or, keep it really easy – To-go Tuesday is a thing now and so is Taco Tuesday. And this year May 5 is on a Tuesday. Seems like a lot of duh factors to help you out!

Chile Lime Snack Mix

Chile Lime Snack Mix is a smoky and tangy take on a traditional cereal snack mix. Its the perfect addttion to a mexican food party or just as a snack through the summer with back porch cocktails.

Ingredients

  • 4 cups rice Chex cereal
  • 2 cups wheat Chex cereal
  • 3 cups pretzel twists
  • 3 cups honey nut cereal circles
  • 4 large handfuls nacho cheese Bugles
  • 2 cups white cheddar cheez-its or goldfish
  • 3 cups chili cheese Fritos
  • 2 sticks unsalted butter
  • 1 packet guacamole seasoning (double taco if you can't find)
  • 1 packet taco seasoning (or dry ranch mix)
  • 1/2 cup lime juice
  • 2 tablespoons Tajin or Chamoy seasoning

Instructions

  • Preheat oven to 250.
  • In a large roasting pan, mix together cereals, pretzels, and Cheese Itz/goldfish.
  • In a glass measuring cup, melt butter in the microwave.
  • Add seasonings and lime juice to butter.
  • Using a fork, stir into butter until mixed and dissolved.
  • Pour over cereal mix and stir together with a wodden spoon or spatula
  • Add Bugles and Fritos.
  • Mix together until everything is coated and combined.
  • Cook for 1 hour and 40 minutes, stirring from the corners every 20 minutes.
  • Let cool completely before storing.
  • Bag individually for treats or store in an airtight container.
  • Enjoy by the handful!

Notes

If you do not have a guacamole seasoning mix, 1/2 taco packet and 1/2 spicy ranch packet can be substituted. This is such a good treat for teachers, holidays, Superbowl or bar parties.

This sweet, tropical-flavored fruit punch is perfect for a shower, holiday party, or party with a Safari, or Mexican theme.

Ingredients

  • 1 frozen orange juice concentrate
  • 1 jug/carton mango juice or nectar
  • 1 jug/carton pineapple juice
  • 1 jug/carton guava juice
  • 1 2 Liter bottle Fresca or 7up
  • 1/4 -1/2 cup Grenadine

Instructions

  • Thaw orange juice concentrate up to 1 hour before party so it is liquid.
  • Keep all juices in the refrigerator prior to mixing the drink.
  • In a pitcher, drink server, or punch bowl, pour together the orange juice concentrate (no water added), mango, and pineapple juices.
  • If you are using guava juice in mold, add those ice cubes at this time, or just pour the guava juice in with the other juices.
  • Add Fresca.
  • Pour Grenadine over top. (if using a mold, pour it over the shapes to outline them in your juice.) The Grenadine will float to the bottom and make a dark red, layered look in your punch container.
  • Serve immediately.
  • If you did not freeze the guava juice, serve with ice cubes to keep the drink chilled.

Notes

If serving as a punch at a party, freeze guava juice in a mold. This can be ice cube trays or a bundt pan, or a shaped plastic or metal device that matches your party them. For this party, I used a brain shaped mold to match our halloween theme. If you are not using a clear container to serve your punch, you can leave out the Grenadine and just use the juices.
Another fun idea if you are making this for a halloween party is to freeze bugs, spiders, and snakes in ice cube trays to use in the glasses as you serve the punch to guests.
