I’m obsessed lately with Mexican Fruit Cups. They are the perfect Weight Watcher Zero Point snack, appetizer, lunch side or dessert.

I didn’t really know about these cups until a couple of years ago at a fiesta street festival that my local community hosts each year around Cinco de Mayo. The festival raises money for scholarships at the local community college and the students come out with their parents and local restaurants to sell food and crafts at booths. I was really looking for an afternoon treat after we had our street tacos and I saw this cup of fresh fruit and vegetables sprinkled with some magic dust and I wanted to try it.

I became obsessed.

How could this taste so good? And, when I found I what was involved, I thought this was the perfect thing to add to my simple lunches at home. It’s my favorite way to eat lunch. Snacky, crispy, a little tart, and it is the perfect addition to any protein or my Zero Point Fruity Chicken Salad. Being a work-at-home mom, I usually eat lunch on my own after I get my kid down for a nap, while I’m writing or making phone calls. So, I need something easy to eat that not too involved to prepare and this is it.

Growing up, I had a friend who was a missionary kid. And I specifically remember two summers when her family was stateside and we would visit her grandpa’s house. We would go out in his garden and snag a cucumber and cut it open. One of her favorite street snacks from their country was to mix together seasoning salt and chili powder. So much about a Mexican Fruit Cup reminds me of those sweet summer moments when my childhood friend. I can see us now sitting on the back porch with our paper plates, and dipping those fresh cucumbers. Is there a better bite of summer?

When I make them at home, I usually throw out the cup and just lay out all the veggie sticks and fruit chunks on my plate before I sprinkle them with lime juice and chile-lime seasoning. But, they are so dang easy and easy on the points as well. Fruit and vegetables are ZERO POINTS on any of the WW plans and the small amount of lime juice and seasoning don’t add any points. So, this side or snack is full of flavor and no WW points. What more can you ask.

Mexican Fruit Cups

Ingredients

  • cucumber
  • jicama
  • carrot
  • cantaloupe
  • watermelon
  • mango
  • Tajin seasoning
  • lime juice
  • plastic punch cups

Instructions

  • Cut and slice fruit into similar size spears, approximately 1/2 inch thick.
  • Stand mixture of fruit and vegetable spears in the cup.
  • Squeeze with lime juice.
  • Sprinkle with Tajin seasoning.
  • Serve immediately.

Notes

Note: Pre-cut fruit and evenly sort it into cups. Cover with plastic wrap and store in the refrigerator until ready to serve. Add lime juice and Tajin at the last minute, right before serving.
