Last fall, our family got away together for a chill weekend on the mountain. We all gathered at the Double D and Lazy T Ranch in Perryville. It was such a fun and relaxing weekend. The internet was not really present, we went for a ride in the ranger to look at the cattle, we drank coffee on the porch and watched the sunrise, we lit the fire pit and made smores. We talked, and laughed, and put babies to bed early and sat and made memories. It was a perfect family weekend and I’m kinda wishing we had one planned for this year.
While we were there, we spent most of the day Saturday exploring at Petit Jean State Park. It was my first visit, but it lived up to everything I knew. The views there are so pretty. And, I always love a day out exploring at an Arkansas State Park. But we pushed ourselves and we explored new places and it was a really fun day.

While we were gone, we put on a crockpot full of Italian Chicken Stew and when we got home, dinner was ready for us!
Rustic Italian Chicken Stew
Ingredients
Soup based – cook together in crockpot
- 1 3 pound bag frozen chicken thighs or breasts
- 1 pouch McCormick Garlic, Herb, White Wine Marinade seaoning
- 2 teaspoons minced garlic
- 1 bag frozen vegetables for stew
- 1 14.5 ounce can Italian Stewed tomoatoes or diced tomatoes with basil
- 1 cup frozen seasoning blend
- 5 red poatoes diced
- 32 ounce box low sodium chicken stock
- 3 bay leaves
- salt and pepper to taste
Just before eating
- 1 tablespoons balsamic vinegar
Instructions
- Add ingredients to crockpot in the order listed, up through the salt and pepper.
- Let cook in crockpot on low for 8 hours.
- 15 minutes prior to serving, Add vinegar to soup base.
- Replace lid and let sit for 10 minutes.
- If serving with bread, preheat the oven and cook bread about 10 minutes before serving.
- Serve in bowls with crusty bread or cornbread crackers.

This is a good stew to put on for Halloween Night. Dinner cooks all day while you are busy or working and when you come home, dinner is ready. I always serve this with a loaf of crusty Italian bread or a frozen loaf of garlic bread. It’s creamy, hearty, and makes your insides all warm.
