Try this Weight Watcher Zero Point friendly Crockpot Apple Butter. It’s great with fuji and gala apples added to your weekly grocery pick up, or from a family trip to the orchard. One of my favorite things to make this from is left over or apples with ugly spots. I love incorporating ugly fruit when I can and you can sometimes find special bags at your local grocery store, or ask the produce manager to save them for you so you can buy them special. However you get your apples, this treat is perfect to can for your own breakfast treats or add a bow and share with a friend. Hey, why not get started on your holiday “just because” gifts!

So, this summer Mr. McKinney and I jumped on a little diet bandwagon. We both wanted to make some changes and have had success with Weight Watchers in the past, so we thought we would try it again. And, it really is a good system. You can eat anything you want because everything has points. Its something we like because it’s teaching us how to make better food decisions and not abandon the foods we love. It’s way more than “everything in moderation.” Its moderation in moderation too and learning to make better food choices overall.
One of the places I’ve struggled most is with breakfast. I don’t love traditional breakfast foods, but I also know I need something in the mornings to keep my blood sugar from dropping. (No, I’m not diabetic, but I did faint on a plane in April because I didn’t have enough protein.) One thing I’ve come to like for breakfast is just a good piece of toast or English Muffin. I do love the breakfast sandwiches I make Mr. McKinney, but I have issues with eggs. I’m weird, but they just freak me out.
As I was adjusting to our new lifestyle trying to eat way less sugar, I tried to come up with options of what I could put on toast or English muffins. There are many great sugar-free things you can buy at the grocery store (hello grocery pick up). But, apple butter and warm cinnamony flavors are something I love. With a little research, I discovered I could make apple butter by using the sweetest fruits and no added sugar. I knew that would be my best option. Basically, by using the sweetest apples and cooking them down, I made a cinnamony apple sauce that was perfect for what I was looking for.
Crockpot Apple Butter (zero WW points)
Ingredients
- 3 pound bag Fuji apples
- 3 pound bag Gala apples
- 2 Tablespoons lemon juice
- 1 Tablespoon cinnamon
- 1 Tablespoon pumpkin pie spice
- 1/2 Cup water
Instructions
- Peel and slice apples.
- Place in crockpot.
- Pour lemon juice over apples.
- Sprinkle with spices.
- Pour water over top.
- Cook on low for 9-10 hours.
- Stir every 2 hours after the first 4 hours.
- Let sit still for the first 4 hours with the lid on to sweat down apples.
- Blend until smooth with an immersion blender or food processor.
- Boil jar lids in water on the stove top.
- Spoon into jars.
- Place metal jar lids on top and screw metal rim until tight.
- Complete with a water bath or turn upside down on a towel to cool to room temperature.
- The steam in the jar and boiled lid should seal off the jar for storage.
- Refrigerate any jar once opened.
