It’s January and most of us are back on a health kick, my family included. I feel like last year I mastered a meatloaf recipe that we love so much, that we crave it! It is a Weight Watcher Friendly Meatloaf, but it has so much flavor in it, that you don’t even know its ground turkey.

Meatloaf is a controversial topic. And, maybe it’s because those first TV dinners often offered meatloaf or it has a bad reputation of being a catchall for lots of things. But, my mama made meatloaf for us growing up and it was always good. Sometimes she made a taco meatloaf with a row of cheese in the middle, or sometimes it was a traditional meatloaf with a tomato base.
Whatever she did, I love it. And, when in doubt it is a menu choice I will often choose. Actually, I have a long-standing joke with a friend after ordering a meatloaf sandwich at Cracker Barrel one day. It was so dang good and I kinda want one NOW. And, a favorite local place I ate in my old town, served a meatloaf sandwich almost weekly and it made me think of that friend every time I saw it on the menu.
One way I’ve found to make it easier to make meatloaf for our family is to scoop it out onto a sheet pan with an ice cream scoop. It takes much less time to cook and I don’t feel like I have to think ahead as much. Now, if you are serving it with baked potatoes, then you might want to throw it in a loaf pan and bake them all for an hour. But, if you are like me you need easy ingredients and something that a kid will eat. When you tell them these are meatballs and serve it with green beans and macaroni and cheese they will be asking for seconds and licking their plates!
WW Turkey Meatloaf
Ingredients
- 2 lbs ground turkey
- 1 cup seasoning blend
- ½ cup bread crumbs or oatmeal
- 1 packet meatloaf seasoning
- 3 Tablespoon SF barbeque or SF ketchup
- 1 Tablespoon dijon mustard
- 10 shakes Worcestershire 2 teaspoons
- 2 eggs lightly beaten
- SF Ketchup to squirt on top
Instructions
- Preheat oven to 400.
- Cook onions in a skillet with a little olive oil.
- In a bowl, add turkey, oatmeal, seasonings, sauces.
- In a separate small bowl, lightly beat eggs with a fork.
- Pour eggs into the meat mixture.
- With hands, combine all ingredients.
- Once onions are cooked, toss into meat mixture.
- Stir with a wooden spoon or spatula.
- Scoop out into a loaf pan, or make heaping scoops onto a foil-lined cookie sheet with an ice cream scoop.
- Top each scoop with 1 teaspoon of ketchup or chili sauce.
- For a loaf pan, bake for 1 hour.
- For scoops of meat, bake for 20 minutes.
