Sometimes you just make something and it blows their minds. Like they take a scoop from the potluck line thinking its hashbrown casserole and instead it’s a fruity side, but they aren’t mad about it. Pineapple Au Gratin Casserole is that side dish!

I’m sharing this month because this will be a perfect dish to take to your Easter gatherings over the next few weeks.

For our Christmas Day meal, we were all just supposed to bring a side dish and my mom was taking this to her gathering and I felt like it was a way we could connect for Christmas even though we weren’t going to be together. Isn’t that what food does for us?

Often times we can think of special times together with our families and remember a dish that was present. Or, maybe the opposite is true. Maybe, you think of special foods you love a fond memory comes back to mind. For me, Pineapple Au Gratin Casserole makes me think of the ladies in my small group in Arkadelphia. Many of them are women I think “raised” me, or at least taught me my formative years of the early twenties how to be a lady and take care of others. (Yes, they are the same ladies who taught me Arkansas Chicken Spaghetti)

Pineapple Au Gratin Casserole

Pineapple Au Gratin Casserole is a perfect side dish for a Sunday dinner, family holiday gathering, Easter or Christmas spread. Canned pineapple mixed with cheddar cheese and topped with Ritz crackers will blow your mind.

Ingredients

  • 4 20 ounce cans chunk pineapple
  • Juice from one can
  • 1 Cup sugar
  • 10 Tablespoons flour
  • 3 Cups cheddar cheese
  • 2 1/2 sleeves Ritz crackers
  • 2 sticks butter

Instructions

  • Preheat oven to 350.
  • Drain 3 cans of pineapple.
  • Add to mixing bowl.
  • Pour 4th can of pineapple in bowl with juice.
  • Add in sugar, flour, and 2 cups of cheese.
  • Stir together all ingredients and pour in 9×13 baking dish.
  • Spread mixture evenly across the baking dish.
  • Sprinkle top of the mixture with 1 cup of cheese.
  • Crush crackers in a gallon zipper bag.
  • Melt butter.
  • Stir in crackers.
  • Sprinkle on top of pineapple mixture.
  • Bake at 350 for 20 minutes, covered with foil.
  • Remove foil and bake for an additional 10 minutes until edges of crackers start to brown.

Notes

Note: pineapple mixture can be made the night before and refrigerated in baking dish. Crush crackers and leave in a zipper bag. When you are ready to cook, set the baking dish out of the refrigerator, melt butter, stir in crackers and sprinkle over top of pineapple mixture. Bake as directed above.
Also, fresh pineapple can be substituted for canned.
