Pineapple Au Gratin Casserole

Pineapple Au Gratin Casserole is a perfect side dish for a Sunday dinner, family holiday gathering, Easter or Christmas spread. Canned pineapple mixed with cheddar cheese and topped with Ritz crackers will blow your mind.

Ingredients

  • 4 20 ounce cans chunk pineapple
  • Juice from one can
  • 1 Cup sugar
  • 10 Tablespoons flour
  • 3 Cups cheddar cheese
  • 2 1/2 sleeves Ritz crackers
  • 2 sticks butter

Instructions

  • Preheat oven to 350.
  • Drain 3 cans of pineapple.
  • Add to mixing bowl.
  • Pour 4th can of pineapple in bowl with juice.
  • Add in sugar, flour, and 2 cups of cheese.
  • Stir together all ingredients and pour in 9x13 baking dish.
  • Spread mixture evenly across the baking dish.
  • Sprinkle top of the mixture with 1 cup of cheese.
  • Crush crackers in a gallon zipper bag.
  • Melt butter.
  • Stir in crackers.
  • Sprinkle on top of pineapple mixture.
  • Bake at 350 for 20 minutes, covered with foil.
  • Remove foil and bake for an additional 10 minutes until edges of crackers start to brown.

Notes

Note: pineapple mixture can be made the night before and refrigerated in baking dish. Crush crackers and leave in a zipper bag. When you are ready to cook, set the baking dish out of the refrigerator, melt butter, stir in crackers and sprinkle over top of pineapple mixture. Bake as directed above.
Also, fresh pineapple can be substituted for canned.
