Sometimes I cook a recipe and impress myself. There I said it, I made a low fat, veggie-packed Naked Chicken Pot Pie that is totally Weight Watcher Friendly and Mr. McKinney and I both wanted to throw it in the repeat pile. This is a take on my traditional Easy Herby Chicken Pot Pie that keeps the one secret ingredient that makes all the difference.

These days, we are using the Purple Plan on Weight Watchers which gives us the most “free” foods, even though that means fewer points per day. But, it has helped us transition back easier off our “no-rules” quarantine menu. One of the main things that we liked about the purple plan is that we get to have potatoes for free. 

When you marry a boy from East Texas, having full access to taters is important. But, I’m so thankful that East Texas boy will go along with my food experiments as we together try to figure out how to take the foods we love and make them fit our new regime. 
I also love the shock and awe of putting the word “naked” in a recipe title, but here’s the deal. That meat and taters boy loves him some bread too, so I knew I’d be getting in trouble on this one, but my favorite part of a chicken pot pie is the creamy insides and all the veggies. So, let’s just call this a compromise on a meal we will keep eating.

Another thing that made this meal so great is that I put it together on Sunday afternoon while cleaning up Sunday lunch and I had 2 meals ready for the week ahead. It kinda made my kitchen crazy dirty, because that’s the way I cook. But, did you read that? As I put up leftovers from Sunday lunch, I had meals for two other nights this week put together as well! 

Meal prepping three meals on Sunday afternoon is always a win!

Naked Chicken Pot Pie

This Naked Chicken Pot Pie is Weight Watcher friendly at 3 points per serving. It keeps all the creamy comfort level and removes the extra fat by eliminting a bread topping. Make your own choice of how you want to top this or serve a salad on the side.

Ingredients

  • 3 chicken breasts or 4 cups leftover chicken cubed
  • 1 bag frozen mixed vegetables (carrots, peas, corn)
  • 1 cup frozen seasoning blend or 1 Cup diced onion
  • 2 russet potatoes or 2-3 cups of frozen southern hashbrowns
  • 1 cup chicken broth
  • 4 oz herb and garlic cream cheese
  • 1/2-1 cup skim milk

Instructions

  • Place chicken in a stockpot and cover with water.
  • Season water with salt, pepper, and bouillon cube, if desired.
  • Bring a stockpot of water to boil.
  • Once boiling, cover and turn the heat down to medium.
  • Boil chicken for 10 minutes.
  • Meanwhile, in skillet cook seasoning blend in preferred oil until onions become translucent.
  • Cut potatoes into 1/2-inch cubes.
  • Remove one breast from the water and check temp.
  • The chicken temp at 165.
  • If it is not cooked, return to pan and check again in 5 minutes.
  • Remove chicken from pan and set on cutting board.
  • With a ladle, scoop out 1 cup chicken broth from the stockpot and pour it into a glass measuring cup.
  • Add cream cheese to the measuring cup and stir until completely melted.
  • Add milk to level off at 2 cups.
  • Chop chicken into 1/2/-inch cubes or shred and chop into bite-sized pieces.
  • In the skillet with onion, add frozen vegetables, potatoes, and chicken.
  • Stir together, then pour in broth mixture.
  • Combine all ingredients then turn out into 9×13 baking dish.
  • Cover with foil and cook for 30 minutes.
  • Or, if serving later, cover and store in the refrigerator. When ready to bake, preheat oven to 350 and bake for 1 hour.
  • Serve with a salad and bread topping of choice, optional.

Notes

Note the naked part of this means there is no bread component. So, you can try a few different things:
  • top with herbed stuffing mix
  • make a can of biscuits and serve on the side
  • make biscuit or crust from a 2-ingredient Dough
  • we will be trying Pound Dropper Cornbread as our next option

I love it when we discover that we can still have comfort foods and we didn’t lose any flavor. That’s my favorite thing about Weight Watchers. I get grumpy at first when I feel like my food options have been diminished, but then the creativity kicks in and I’m all good.
