Goodness gracious what a month April has been. Our April Meal Plan has been kinda sparse and overly creative. But, we are still trying our best to social distance and eat down the foods we have at home. I’ll admit I’ve been getting a little sidetracked by some Pinterest finds (you should totally follow me!) and new things I grab each week at the grocery store. But, for the most part, we are keeping it on rinse and repeat and simply eating some of our favorites during self-quarantine.

Monthly Meal Plan for April | Menu planning made easy with weeknight dinners, sheet pan meals, grilled vegetables and supporting local restaurants.

April Meal Plan | Week 1

  • Check out the March meal plan for how this week started!
  • Wednesday –  Short cut lasagna – I had in the freezer from a double batch
  • Thursday –  orange chicken and brown rice – PF Chang’s Frozen meal
  • Friday –  frozen pizza
  • Saturday –  
    • Breakfast – banana bread french toast – Bake banana bread the day before, cut into slices and dip in a french toast batter of egg and milk. Brown on both sides and serve with honey or Sugar-Free Syrup
    • Lunch – hot pocket picnic, yep you read that right. Hot Pockets and Pringles – we are gourmet!
    • Dinner – leftover Lasagna and Caesar Salad

April Meal Plan | Week 2

  • Sunday –  
    • Lunch – take out
    • Dinner – clean out the fridge night, aka Fend for Yourself
  • Monday –  Pineapple Chicken
  • Tuesday –  clean out the fridge 
  • Wednesday –  Great Value Lemon Pepper Chicken frozen pasta meal 
  • Thursday –  Pineapple Chicken leftovers 
  • Friday –  car picnic with daddy –Jake’s Brickhouse to go
  • Saturday –

  • Sunday – Easter 
    • Breakfast- Sister Shubert sausage rolls 
    • Lunch –  Pork Tenderloin, Roasted Carrots and Brussel Sprouts, Mashed Potatoes, rolls, Carrot Cake 
    • Dinner – chip and dip
  • Monday – Pulled Pork Baked Potatoes
  • Tuesday – Healthy Chili Mac – one of the best things we’ve eaten in a while
  • Wednesday – Easter leftovers 
  • Thursday – Pulled Pork Tostadas 
  • Friday – Frozen Pizza
  • Saturday – 
    • Breakfast – McDonald’s drive-thru on way to adventure
    • Lunch – turkey wrap and chip picnic
    • Dinner – to go hibachi from our new food truck Hachi Hachi

  • Sunday –   
    • Breakfast – Pioneer Woman Breakfast Parcels – so good! – from the New Frontier Cookbook
    • Lunch – frozen turkey and dressing dinner and broccoli
    • Dinner – leftover chili mac
  • Monday – PW Slow Cooker Butter Chicken – from the New Frontier Cookbook, again
  • Tuesday –  My Birthday Dinner – my boys grilled fajitas with grilled corn salsa and pink pie
  • Wednesday –  Chicken Spaghetti (doubled and put one in the freezer!)
  • Thursday – frozen pizzas – water main in town broke, so we had to keep it simple
  • Friday – Simple Simon’s pizza
  • Saturday –

  • Sunday – 
    • Breakfast – protein waffles
    • Lunch –  Meatloaf, Baked Potatoes, Brussel Sprouts
    • Dinner – leftover pizza
  • Monday –  leftover Butter Chicken with 2-ingredient dough Naan and roasted broccoli
  • Tuesday – quesadillas with leftover fajita meat and grilled corn salsa  
  • Wednesday –  leftovers – clean out the fridge – what’s left from last week?  
  • Thursday – Swedish Meatballs over Egg Noodles
