Man, I love summer eating. I mean I love fall eating with all the comfort foods, but I love the light and easy meals that come from easier summer days, more vegetables, and sweet fruits. This summer was not as busy as others trying to accommodate COVID, but we still managed to make some fun memories together and eat a lot of roasted vegetables and grill meals.

Weekday lunches are not recorded because they are usually just for me, but often include any combination of the following:
- Chicken Salad
- Chickpea Salad
- Caprese Salad
- Pimento Cheese Spread
- Light crackers
- Big pile of carrots or celery
- Hummus – Lantana are my favorite these days
- A big pile of fruit to fill me up

- Wednesday – Reuben sandwiches, carrots, and veggie dips

- Dinner – grilled steaks, grilled vegetables and corn on the cob

- Late Lunch – pork tenderloin, frozen veggie macaroni n cheese, roasted broccoli
- Monday – naked chicken pot pie with herbed stuffing mix topping
- Tuesday – leftover steaks and grilled vegetables
- Wednesday – leftover naked chicken pot pie
- Thursday – frozen lemon herb chicken pasta meal
- Friday –Â SF BBQ chicken pizza (2 ingredient dough)
- Saturday –Â Â
- Breakfast – breakfast sandwiches and coffee
- Lunch- picnic lunch at the waterfalls
- Dinner- Mexican street tacos

- Lunch –Â leftover pork tenderloin, pasta with kale and cherry tomato sauce
- Dinner –Â sandwiches and chips, poolside watermelon

- Tuesday –Â ribs, mashed potatoes, and roasted Brussel sprouts
- Wednesday –Â Asian lettuce wraps
- Thursday –Â leftover spaghetti squash lasagna
- Friday –Â lettuce wrap leftovers into rice bowls

- Lunch – street tacos
- Dinner – burgers, chips, brownies
- Wednesday – River play day
- Lunch – brisket sandwiches and ice cream
- Dinner – Grilled fajita bar – guac, salsa, beans
- Thursday –Â Old Washington State Park and cabin hang out
- Lunch – Old Washington burger and grilled cheese
- Dinner – leftovers from the week
