I am freaked out by eggs, there I said it. I can’t tell you why or what it is, but they freak me out. But, I’ve determined that I love a poached egg, of all things. I know. So, once I discovered my love of a poached egg, I set out to learn how to make a poached egg. And, I think I’ve mastered that as well.

You know I think I get way too much pleasure out of “mastering” a kitchen skill I see used on all those darn shows I watch. But, I’ve done it, and It’s my jam. Also, my jam is these Open-Faced Poached Egg Breakfast Sandwiches that bring a lot of joy to slow, easy weekend mornings at home. 

Kmac’s Method to Poach an Egg

  • Fill a 2-quart saucepan ¾ the way with water.
  • Add a big pour of white or apple cider vinegar.
  • Bring to a boil. 
  • Gather supplies – small boil, eggs, slotted spoon, paper towel-lined plate
  • Turn the water down to medium-high, it should stay boiling.
  • Break the egg into a bowl.
  • Spin the water clockwise with the spoon.
  • Pour egg into the water along the edge of the pan. 
  • Stir the water again to let whites coagulate and swirl around the yolk.
  • Let boil for 5 minutes.
  • Scoop out the egg with a slotted spoon.
  • Let water drip off. 
  • Gently set on a towel-lined plate.
  • Allow the egg to dry for a couple of minutes.
  • Repeat with other eggs.

I know, it seems like a bunch of steps but once you do it, you will see that it just rolls. And, is the perfect topping on this breakfast sandwich. But, I love a poached egg over a breakfast hash or a quinoa bowl. There are so many ways that oozy, runny yolk can make a meal so much better!

Open-Faced Poached Egg Breakfast Sandwich

This open faced poached egg breakfast sandwich is a quick, easy weekend breakfast that is full of protein and has such a buttery flavor from the egg yolk and goes over the top with the everything bagel seasoning.

Ingredients

  • 1 whole wheat English muffin
  • 1 wedge Laughing Cow Cheese
  • 4 strips Alfresco chicken bacon
  • 2 eggs
  • Everything Bagel Seasoning

Instructions

  • Toast the English muffin.
  • Split the cheese between the two muffin halves and spread.
  • Cook chicken bacon according to package.
  • Tear in half and place on each muffin.
  • Poach two eggs.
  • After they dry, place one on top of each muffin half.
  • Sprinkle top with seasoning.

Notes

Note: this has been an easy Weight Watcher breakfast for us. But, with the new plan, some of the things have new and higher points that make this a higher point breakfast than it has been in the past. Enjoy it and we do but know there are a lot of other WW friendly breakfasts that may not “cost” as many points. OR, if you have eggs as one of your free foods, then it stays pretty low in points.
Turkey or regular bacon can be used in place of chicken bacon. And, avocado would be a great addition under the egg.

There is just not much more gratifying than poking a poached egg and watching the buttery yolk ooze all over your breakfast. 

All I can think about is that moving with Jennifer Aniston in it where she only orders her egg the way the guy she is on a date with orders his eggs. And, at the end of the movie is at the kitchen counter surrounded by plates of cooked eggs (barf) and she determines the way she really likes an egg. That’s me, and I want it poached!
