My classic sausage ball recipe is so popular because the Cheddar Bay Biscuit Mix handles most of the work. You can change up the flavors — spicy sausage, maple sausage, rosemary and mozzarella cheese for Christmas, or even more luxurious, creamy cheeses like fontina or gouda. But using pimento cheese delivers the best texture: chewy, cheesy, meaty sausage balls without grated cheese and without the dry crumble that sometimes appears in traditional recipes.

It’s still a simple three-ingredient treat, but now it tastes like it took much more effort to make. And no one will ever guess that their grandma’s favorite party food is what makes these “meaty sausage balls” so special.

Pimento Cheese Sausage Balls

Three ingredients. Zero leftovers. Protein Packed.

Ingredients

  • 1 11 or 12 oz. tub pimento cheese
  • 2 1-lb tubes breakfast sausage
  • 1 box Cheddar Bay Biscuit Mix with seasoning packet

Instructions

  • Preheat oven to 350°F.
  • In the bowl of a stand mixer, combine sausage and pimento cheese until evenly mixed.
  • Add the biscuit mix and seasoning packet.
  • Stir until everything is fully incorporated.
  • Scoop into 1-inch portions and roll into balls.
  • Place on a baking sheet and bake 10–15 minutes, depending on your oven.
  • Remove to a cooling rack.
  • Store in an airtight container.
