What Is Cookie Butter?
If you’ve never wandered down the Trader Joe’s aisle or spotted the red-capped jar at your local grocery store, cookie butter is basically magic in spreadable form. It’s made from spiced European Biscoff cookies blended with sugar and oils until it becomes a thick, creamy, slightly gingerbread-y spread that tastes like December in a jar. (and has the same texture of peanut butter spread)
Originally, cookie butter was a Belgian treat made with speculoos cookies. When Trader Joe’s brought it to the U.S., the internet collectively lost its mind, and for good reason. It’s cozy, warm, nostalgic, and somehow tastes like a hug. And in pie form? Unreal.
But, for this recipe, I’ve discovered that I like to make it most often with the Great Value version. I prefer to eat the Trader Joe’s version and will default ot the Biscoff brand, but for this one, the Walmart brand has a slightly “spicier” taste and that travels well through the creamy blend of ingredients. So, if you cannot grab the Great Value brand, I suggest using pumpkin pie seasoning instead of ground cinnamon to add holiday spice.

The Easiest No-Bake Cookie Butter Pie
Ingredients
- 1 sleeve Biscoff cookies ginger snaps can be substituted
- ½ stick butter
- 8 oz. cream cheese block
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 cup speculoos cookie butter
- dash ground cinnamon or pumpkin pie spice
- ½ tub whipped topping
Instructions
- Place the cookies in a zip-top bag and crush them into fine crumbs.
- Melt the butter in the microwave.
- Pour the cookie crumbs into an 8×8 dish or pie plate and mix in the melted butter.
- Press the mixture firmly into the bottom and slightly up the sides to form a crust.
- In a stand mixer, beat the cream cheese with half of the powdered sugar.
- Add the remaining sugar and continue mixing until smooth.
- With the mixer on low, slowly pour in the heavy cream.
- Increase speed and mix until the mixture is fully combined and creamy.
- Stop the mixer and add the cookie butter and cinnamon, mixing until everything is incorporated.
- Gently fold in the whipped topping by hand.
- Spread the filling evenly over the crust.
- Refrigerate for at least 1 hour, or chill overnight for best results.
