This No-Bake Butterscotch Cheesecake could be the perfect way to fancy up any St. Patty’s Day or Valentine’s dinner plans at home. I love making holiday special with a homecooked meal and any holiday is an excuse for a special, festive meal with your family.

Getting ready for Christmas this past year, I learned something new about my husband. He likes butterscotch. Who knew? Well not me! 

I thought, I’ve been married to you for almost 5 years and this is the first I’ve heard of this?? He likes those butterscotch disc candies, he like maple nut candies, he likes a blondie cookie bar, and he likes butterscotch syrup in his coffee. My mind was blown!

Well, that new news coupled with my deep dive of all Food Network Holiday specials I felt every bit confident that I could be the next Holiday Baking Champion and develop my own no-bake recipe just for him!

Two times a year I like to try and recreate a “fancy dinner” at home. The rest of the time, I let him take me out. But when it comes to our Christmas night together and Valentine’s Day, I like to make a special meal at home for my boys. 

The dinner I made for Christmas was a lot of first but it was killer and I might just repeat most of it for at home celebrations.

  • Filet mignon with wine reduction sauce 
  • Lobster Tails 
  • Scallops in garlic butter 
  • Roasted Broccoli
  • loaded mashed potatoes with Boursin cheese

Yes, it was every bit as decadent as it sounds  and the homemade butterscotch sauce was the perfect addition to round out extra love for my main squeeze. I even took extras to my parent’s and my dad who wanted to turn up his nose could not stay out of it. So, guess what’s its on the menu for St. Patrick’s Day dinner this next week with our reubens, sausages, and some kind of green something on the side.

I’ve probably just blown my cover. They won’t eat anything green if they know there is a good dessert following the meal. While it easy to just add green food coloring to any random dessert, and that’s usually what I do, I decided this year to repeat something we loved.

No Bake Butterscotch Cheesecake

This easy, simple no base cheesecake incorporates the rich and decadent flavors of homemade butterscotch in a light and airy layered dessert. Its perfect for a formal dinner at the holidays, card party, summer gathering or church potluck.

Ingredients

  • 1 stick butter
  • 1 Cup dark brown sugar
  • ½ teaspoon salt
  • 1 Cup heavy cream
  • 1 package speculoos cookies graham crackers or vanilla wafers could work
  • 1 stick unsalted butter
  • Pinch of salt
  • 2 boxes instant cheesecake pudding
  • 2 Cups milk
  • ½ Cup butterscotch sauce
  • 2-8 oz cream cheese softened
  • 1 can sweetened condensed milk
  • ½ tsp cinnamon
  • 8 oz cool whip
  • 2 tablespoons brown sugar.

Instructions

  • Make the Sauce. Prepare the layers. Then assemble.

Make the Butterscotch Sauce

  • In a non-stick skillet, melt together butter, brown sugar, and salt on medium heat.
  • Stir together all ingredients with a spatula until incorporated.
  • Bring to a boil.
  • Let boil for four minutes on medium heat, stirring occasionally.
  • Remove completely from heat and stir in heavy cream.
  • Completely stir together and let set to room temperature.
  • Store in a mason jar.

For the Crust:

  • Melt butter.
  • Pulse cookies in a food processor.
  • Add in butter and salt, mix together in a food processor.
  • Press into bottom of 9×13 making dish using the back side of a measuring cup.

Cheesecake Layers:

  • Whisk together 2 boxes of pudding with 2 cups milk.
  • Set aside to thicken.
  • In a stand mixer, beat together cream cheese, sweet milk, and cinnamon.
  • Whip until fluffy.
  • After about 20 minutes, stir butterscotch sauce into pudding mixture using a spatula.

Assemble Layers

  • Spread cream cheese mixture on top of cookie crust. Place spoonfuls all over cookie crust to make it easier to spread.
  • Spread pudding mixture on top of cream cheese mixture.
  • Top whole dessert with one tub of cool whip.
  • Sprinkle top with loose brown sugar. It will melt and make a crackle effect on the top before you eat.
  • Refrigerate for 1 hour before serving.
  • Serve with sauce drizzled over each piece.
  • This dessert is easy to make ahead and still impress at your holiday party.

  • Crust
  • Cream cheese layer
  • Pudding
  • Cool whip
  • Serve with sauce to drizzle
