No Bake Butterscotch Cheesecake
This easy, simple no base cheesecake incorporates the rich and decadent flavors of homemade butterscotch in a light and airy layered dessert. Its perfect for a formal dinner at the holidays, card party, summer gathering or church potluck.

- 1 stick butter
- 1 Cup dark brown sugar
- ½ teaspoon salt
- 1 Cup heavy cream
- 1 package speculoos cookies graham crackers or vanilla wafers could work
- 1 stick unsalted butter
- Pinch of salt
- 2 boxes instant cheesecake pudding
- 2 Cups milk
- ½ Cup butterscotch sauce
- 2-8 oz cream cheese softened
- 1 can sweetened condensed milk
- ½ tsp cinnamon
- 8 oz cool whip
- 2 tablespoons brown sugar.
Make the Butterscotch Sauce
In a non-stick skillet, melt together butter, brown sugar, and salt on medium heat.
Stir together all ingredients with a spatula until incorporated.
Bring to a boil.
Let boil for four minutes on medium heat, stirring occasionally.
Remove completely from heat and stir in heavy cream.
Completely stir together and let set to room temperature.
Store in a mason jar.
For the Crust:
Melt butter.
Pulse cookies in a food processor.
Add in butter and salt, mix together in a food processor.
Press into bottom of 9x13 making dish using the back side of a measuring cup.
Cheesecake Layers:
Whisk together 2 boxes of pudding with 2 cups milk.
Set aside to thicken.
In a stand mixer, beat together cream cheese, sweet milk, and cinnamon.
Whip until fluffy.
After about 20 minutes, stir butterscotch sauce into pudding mixture using a spatula.
Assemble Layers
Spread cream cheese mixture on top of cookie crust. Place spoonfuls all over cookie crust to make it easier to spread.
Spread pudding mixture on top of cream cheese mixture.
Top whole dessert with one tub of cool whip.
Sprinkle top with loose brown sugar. It will melt and make a crackle effect on the top before you eat.
Refrigerate for 1 hour before serving.
Serve with sauce drizzled over each piece.
This dessert is easy to make ahead and still impress at your holiday party.
