Wow, it was so nice to spend some time at home this month. January is always a month to reset. That means new eating goals and cleaning out the freezer. But, it also means working in a few new recipes I’ve saved on my Pinterest boards throughout the year.

January Meal plans often mean more vegetables, warm soups and lightened up versions of many things we love year-round. Oh, and lots and lots of slow cooker meals. I also resort back to my old ways – cook at the beginning of the week, leftovers at the end. For us, its two adults and a toddler. We won’t always be able to eat and meal plan this way, but it works and would work for a couple without kids as well. I always get busier as the week goes on. I usually have time at the beginning to take care of making a meal and I really only know how to cook for four since that’s what I learned growing up!

January Meal Plan | Week 1

  • Tuesday | New Year’s Eve – Mexican Food Take Out
  • Wednesday –  Terriyaki Chicken, Cauliflower Rice, Chinese Dumplings – all freezer foods
  • Thursday –  Chicken Spaghetti leftovers and Ceasar Salad
  • Friday –  leftover Pork Tenderloin with roasted rosemary potatoes and roasted broccoli
  • Saturday | PawPaw’s Birthday – Creamy Chicken Casserole, Hashbrown Casserole, Marinated Green Beans, Sister Shubert Rolls, Chocolate Sheet Cake, and vanilla ice cream

January Meal Plan | Week 2

  • Sunday – hubby had to work, so it was leftovers and sandwiches 
  • Monday –  carnitas – frozen sheet pan meal in tortillas
  • Tuesday –  Slow Cooker Deer Stroganoff
  • Wednesday – church supper – Philly cheesesteak sloppy joes
  • Thursday –  leftovers
  • Friday –  Date Night (steaks!)
  • Saturday – Southwest Corn Chowder with Sausage

  • Sunday – 
    • Lunch – McDonald’s drive-thru and after church mtg
    • Dinner – Stroganoff leftovers over seasoned cauliflower rice
  • Monday – Hawaiian Chicken  with coconut rice
  • Tuesday – leftover chowder and grilled cheese
  • Wednesday – church supper – nacho bar 
  • Thursday – leftovers
  • Friday – Chicken Parmesan
  • Saturday – 
    • Breakfast – feed community college basketball team – Sausage patties, hashbrown casserole, french toast casserole
    • Dinner out-burgers

January Meal Plan | Week 4

  • Sunday –   
    • Lunch –  deer steak, corn on the cob, zucchini 
    • Dinner – FFY – Fend for yourself – totally stole this from my friend Jacqueline
  • Monday – Pad Thai and oriental veggies
  • Tuesday –  dinner out
  • Wednesday –  Church – spaghetti and salad
  • Thursday – Pad Thai leftovers on cauli rice
  • Friday – Roma’s takeout – tortellini, salad, and pizza
  • Saturday – Two Wild Safari Bday Party (pulled pork, chips, pineapple slaw, banana pudding, dirt dessert, jungle juice)

January Meal Plan | Week 5

  • Sunday – 
    • Lunch –  beef stew and cornbread
    • Dinner – grilled cheese
  • Monday –  BBQ Nachos in sweet peppers – pulled pork enhanced with veggies with Salad
  • Tuesday –   Beef Stew leftovers
  • Wednesday –  church
  • Thursday – BBQ on Baked Potatoes with Mexican cheese and salad
  • Friday – Family Birthday celebration dinner
  • Saturday – Family celebration weekend

With a birthday boy celebration and cleaning out the pantry and fridge, this is what our January will typically look like. Much easier to plan meals when I cook on Monday and Tuesday with the plan for leftovers on Thursday and a weekend meal. It was nice to be home more and spend quiet, simple nights together as a family!
