The weather got cool this week. The afternoon sun is perfect. My yard is covered with leaves and the colors they are a changing. All that means is when I’m on Pinterest and I see anything pumpkin, my eyeballs turn to hearts and I get all googly-eyed!!! And, that means I’m going to need lots of Pumpkin Pie Spice Mix to make those recipes happen.
Such was the case last week when I ran across a new pumpkin bread recipe from the Domestic Rebel. Baby cravings have me eating all kinds of weird things at odd times, but in the middle of the afternoon I decided it was time to make a treat we could eat after dinner that night….. so I did.
Baking ingredients are something I almost always keep in my pantry and I had everything but pumpkin pie spice. But, I bravely thought I might have everything on hand to make my own pumpkin pie spice mix. And, after a little research, I was correct. Why I randomly have ground cloves and not pumpkin pie spice I can’t tell you other than I used it all up last year and these were left from Christmas. None-the-less, I made my own pumpkin pie spice shaker and the bread was ridiculous. I doubled the recipe to make 2 loaves, so I could take one with me to the nurses the next day at our baby appointment and there were big smiles all around. I’m actually not sure one shared with the other!
Here’s a quick mix up if you find yourself pumpkin pie spice -less. And, in mason jars, these would make great little Christmas presents. Not that I’m already working on stuffing Christmas stockings or anything!
