Zero Point White Chicken Chili

This zero-point WW Slow Cooker White Chicken Chili is full of earthy Mexican flavors and the perfect soup for Gameday, weeknight dinners, winter nights, or busy weekends.

Ingredients

  • 2 chicken breasts fresh or frozen
  • 1 can Southwestern or Whole Kernel corn
  • 1 can great northern beans drained and rinsed
  • 1 sm can green chilies
  • 1 can petite diced tomatoes
  • 1 packet chicken taco seasoning
  • 1 cup green salsa
  • 3 cups chicken broth or 2 cans

Instructions

  • Place chicken in the bottom of the slow cooker.
  • Drain and rinse beans and add to slow cooker.
  • Add other ingredients to the slow cooker.
  • Cook on low for 8 hours.
  • Remove chicken and chop or shred.
  • Add back to slow cooker and stir together.
  • Taste soup for seasoning and adjust as needed.
  • Serve hot and garnish with cheese, sour cream, cilantro, and salsa.

Notes

Serve the soup on its own and keep your calories for other places in your menu plan. Or, melt Fat-Free cheese between corn tortillas like mini quesadillas. Bite-sized tortilla chips are also an easy side if you need a little texture in your meal.
