Preheat your oven to 400 degrees.
In a glass measuring cup or bowl, stir together soy sauce, rice vinegar, lime juice, garlic, ginger, and Thai red curry sauce until well combined.
Place the frozen potstickers flat side down in a 9 x 13 baking dish.
If you are serving with vegetables - chop and place on a foil lined sheet pan. Bake at 400 for 20 minutes. Or, add vegetables to the bottom of the baking dish before adding the sauce.
Pour the sauce evenly over the potstickers, making sure everything is coated and all potstickers are "sitting" in sauce.
Bake for 25 minutes.
While it bakes, prep your garnishes.
Remove from the oven, top with garnishes, and serve.
