Dairy-Free Potsticker Casserole

Ingredients

  • 20 to 25 frozen potstickers

Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh minced ginger
  • 1 jar Thai red curry sauce

Garnish:

  • 1 green onion chopped
  • 1/2 cup cashews or peanuts chopped
  • Everything bagel seasoning
  • Fresh cilantro
  • Chili crunch oil

Instructions

  • Preheat your oven to 400 degrees.
  • In a glass measuring cup or bowl, stir together soy sauce, rice vinegar, lime juice, garlic, ginger, and Thai red curry sauce until well combined.
  • Place the frozen potstickers flat side down in a 9 x 13 baking dish.
  • If you are serving with vegetables - chop and place on a foil lined sheet pan. Bake at 400 for 20 minutes. Or, add vegetables to the bottom of the baking dish before adding the sauce.
  • Pour the sauce evenly over the potstickers, making sure everything is coated and all potstickers are "sitting" in sauce.
  • Bake for 25 minutes.
  • While it bakes, prep your garnishes.
  • Remove from the oven, top with garnishes, and serve.

Notes

Optional Sauce Swap - instead of the jarred Thai red curry sauce, you can do
  • 2 tablespoons red curry paste
  • 1 cup coconut milk
Offer the garnish options to add on by plate for preference and to avoid other allergies
