Crockpot Gumbo

This crockpot Gumbo recipe is a perfect way to shop your pantry and freezer and make a warm, spicy meal with items you may already have on hand!

Ingredients

  • 3-4 chicken breast frozen
  • 1 pkg smoked sausage or kielbasa
  • 14.5 ounce stewed tomatoes, canned
  • 6 ounce can tomato paste
  • 2 gumbo seasoning base
  • 2 bay leaves
  • 2 quarts chicken stock
  • 2 bags vegetables for gumbo frozen
  • 1 bag extra small shrimp frozen
  • rice - white, brown, long grain or cauliflower rice
  • 2 loaves Italian Sourdough bread

Instructions

  • Cut sausage links in to 1-inch pieces and cut each piece in to quarters.
  • Add crockpot liner to crockpot.
  • Place chicken breasts in bottom of crockpot.
  • Place sausage link quarters on top of chicken.
  • Add gumbo base, bay leaves, tomatoes, tomato paste, and chicken stock to crockpot.
  • Cover with lid and cook on low for 8 hours.
  • 45 minutes before eating, take out chicken and cut in to cubes.
  • Put chicken back in crockpot.
  • Add frozen vegetables to crockpot.
  • Replace lid and keep cooking.
  • 15 miuntes before serving, stir in frozen shrimp.
  • Replace lid and keep cooking.
  • Read labels on rice option and prepare as directed on package.
  • Serve "soup" over rice and with bread to "sop" it up.

Notes

I served mine with Cauliflower Rice, to keep it low carb. But, my dad is not an extra veggies fan, so the 90 second microwave bag of Uncle Ben’s Long Grain rice was a perfect alternative. I will say this is how we discovered that cauliflower is on the no fly zone while I’m breastfeeding…gives little man the gas! But at least it keeps him the life of the party and since he is less than a month old, its still cute.
