Sausage Sheet Pan Meal

This Weight Watcher friendly sausage sheet pan dinner is a perfect weeknight dinner or St. Patricks Day celebration that brings all the flavor and drops all the calories.

Ingredients

  • 1 pkg Chicken Sausages or Turkey Polish or Turkey Smoked Sausages
  • 1 bag frozen Broccoli fresh broccoli or brussel sprouts works well too
  • 3 Bell pepper - red, yellow, orange (1 each)
  • 1/2 Red onion
  • Petite carrots optional
  • Olive oil spray
  • Balsamic vinegar
  • Rice minute, boil in a bag, boxed side, or microwave pouches

Instructions

  • Preheat oven to 400.
  • Line cookie sheet with foil and spray with olive oil.
  • Cut Bell Pepper and red onion into chunks.
  • If using turkey sausages, cut into 3 inch chunks.
  • Add vegetables and meat to cookie sheet - it can all mix together or separate if you have picky eaters.
  • Spray with olive oil spray and sprinkle with balsamic.
  • Add other seasonings if you like - cajun, season all, garlic and onion, steakhouse, or salt and pepper.
  • Bake at 400 for 20 minutes, look for browning on edge of veggies and meat.
  • While pan is cooking, prepare rice according to box direction.
  • Remove pan from oven and serve meat and veggies over prepared rice.

Notes

Note - potatoes or sweet potatoes are a great alternative to rice. Just prepare them and start cooking earlier. Potato quarters take 30-45 minutes when baked at 400. 425 is a better temp for cooking potatoes, so shift the cook time for veggies and meat to 12-15 minutes.
