Weight Watcher Friendly Crockpot Sausage Tortellini Soup

This easy crockpot recipe uses the slow cooker to create deep flavors and redeems the calories with a big punch of high fiber vegetables that make it very WW friendly and the perfect hearty soup for cold winter nights.

Ingredients

  • 1 lb Turkey Italian sausage
  • 1 cup chopped frozen onion
  • 1 cup chopped frozen bell pepper
  • 1 spaghetti sauce packet or 2 T Italian seasoning
  • 2 cans diced tomatoes with garlic or Italian Stewed tomatoes
  • 1 can Campbell's condensed French Onion soup
  • 32 oz box beef broth
  • Salt and pepper to taste
  • 1 bag coleslaw blend
  • 4 big handfuls chopped spinach/kale salad blend can be all one or the other
  • 9 oz. bag frozen cheese tortellini can sub wheat pasta
  • 1 cup FF mozzarella

Instructions

  • Cook sausage and drain on a paper towel-lined plate.
  • In sausage grease, sauté onions and bell pepper.
  • (First two steps can be done the night before or immediately before assembling)
  • Line crockpot with a liner.
  • Place meat, onions, and bell pepper in the bottom of the crockpot.
  • Add tomatoes, onion soup, seasoning, and beef broth.
  • Salt and pepper to taste.
  • Cook on low for 4-6 hours.
  • 15 minutes before eating, add coleslaw mix, chopped spinach, tortellini, and cheese.
  • Serve with garlic bread or crescent rolls.

Notes

Note: if you are not planning to eat the entire bowl of tortellini, you might consider adding tortellini to each bowl. Leftovers absorb the broth in the soup and it can become overcooked and too soft.
With the new WW plan, we are using whole wheat pasta as a zero-point food, so I would sub out whole wheat rotini or penne for tortellini to save points. But, when you put in the recipe, it comes out to 4 points a bowl or 3 points a bowl with whole wheat pasta.
