The weather got cool this week. The afternoon sun is perfection. My yard is covered with leaves and the colors they are a changing. All that means is when I’m on Pinterest and I see anything pumpkin, my eyeballs turn to hearts and I get all googly eyed!!!
Such was the case last week when I ran across a new pumpkin bread recipe from the Domestic Rebel. Baby cravings have me eating all kinds of weird things at odd times, but in the middle of the afternoon I decided it was time to make a treat we could eat after dinner that night….. so I did.
Baking ingredients are something I almost always keep in my pantry and i had everything but pumpkin pie spice. But, i bravely thought I might have everything on hand to make my own pumpkin pie spice mix. And, after a little research I was correct. Why I randomly have ground cloves and not pumpkin pie spice I cant tell you other than i used it all up last year and these were left from Christmas. None-the-less, I made my own pumpkin pie spice shaker and the break was ridiculous. I doubled the recipe to make 2 loaves, so I could take one with me to the nurses the next day at our baby appointment and there were big smiles all around.
Here’s a quick mix up if you find yourself pumpkin pie spice-less. And, in mason jars, these would make great little Christmas presents. Not that I’m already working on stuffing Christmas stockings or anything!
